80 g crushed digestive biscuits
4 rolls haw flakes (crushed)
30 g unsalted butter (melted)

【Cheese Filling】
250 g cream cheese
60 g sugar
220 g whipping cream
2 tsp gelatin powder
2tbsp hot water

【Hawthorn Jelly】
50 g dried hawthorn berries
1 apple
300 ml water
4 g agar-agar

5 fresh strawberries (sliced)
crushed haw flakes

how to make:

【Cake Base】
Mix the crushed digestive biscuits with haw flakes, and then melted butter. Press the mixture into a cake tin. Keep refrigerated for later use.

【Cheese Filling】
Beat the cream cheese until smooth. Whip the whipping cream until fluffy. Dissolve the gelatin powder in hot water. Mix the gelatin solution into the cheese, and then whipping cream. Pour the mixture over the cake base. Keep refrigerated until it is set.

【Hawthorn Jelly】
Peel and core the apple and slice it. Rinse the hawthorn. Put the apple slices and hawthorn in water and cook over low heat for about 20 minutes. Strain and mix the solution with agar agar. Cook until agar agar melted. Pour into any mold. Set aside to let cool and refrigerator for 1 hour until set. Cut into dices.

Unmold the cake. Top with strawberries and hawthorn jelly. Sprinkle with haw flake.
